What is your favourite dish on the menu?
We change the menu regularly, roughly every four months or so, but one of my favourite meals is always fish and chips. Some people might say that’s not the most exciting choice, but it’s a classic, and when you get good fish and chips, they’re really good.
What is the most popular cocktail you serve?
Pimm’s in the Willows. A great combination of Pimm’s, and plum and vanilla Edinburgh Gin.
What’s the best meal of the day?
We offer everything here at the restaurant from breakfast onwards, but personally I love a good dinner. The menu here has a bit of a traditional country pub feel to it, which sets it apart from what lots of other restaurants do. We always have two or three pastry-based pies on the menu, which is quite unique in the city centre.
What are customers looking for in 2018?
Our customers are largely young professionals, who are keen to go out for good food and drink. Craft beers will continue to be popular, particularly beers from the smaller breweries who do things that are a little bit different. I think gin will remain just as popular as it has been this year, both the new fruit-influenced blends as well as the old classic dry gins. Prosecco is still hugely popular and I don’t see that changing.
What makes a successful restaurant?
The food has to be good, but I also think that every customer has to be treated in a way that ensures they want to come back. It’s all about making sure the customer is happy, good service, the look and ambience of a place is important - it’s basically the whole package.
