How did you get into cooking?
I started cooking for my family when I was 10 or 11 years old, I’ve always had a real interest in it. I went to cookery school, then worked during the holidays at small restaurants and wedding venues to get more experience. I’ve now been working at Browns for five years.
What is your favourite dish on the menu?
I love the fish pie. It’s a great traditional dish - it’s very good indeed!
Any tips for amateur cooks?
Always cook with your heart. Do what you love and enjoy it.
What’s always in your fridge at home?
It always seems to be full of yoghurt for my three-year-old son!
Do you have a favourite cookbook?
Not really. I’m more likely to take inspiration from recipes I find online, or be inspired by TV cookery shows.
What is your idea of food heaven?
When my wife cooks. She’s from Thailand and cooks amazing Thai food, it’s so full of flavour; she’s the best Thai chef I know!
